We may be in the midst of another lockdown, but warmer weather and longer periods of daylight seem to make things more bearable. Another challenge of the pandemic is the ease of planning and managing home improvement projects at this time of year. Access to retail stores is restricted at this time, there are shortages in materials, and contractors have been booked solid for the past year. Over the past year, it seems that many of us have spent more time in the kitchen and also more time in front of the TV.  For this month, we thought we would share a recent discovery -- the special shortbread cookie bars featured in Season One of Ted Lasso.

 

Apple just released a teaser reveal of Ted Lasso’s secret shortbread recipe, and a little internet savvy research revealed this recipe as the possible one - we decided to try it, and it became an instant hit!  It definitely has become a popular treat in our home -- either made a la Ted Lasso -- as just the shortbread bar -- or for a decadent indulgence by following the full recipe of Melissa Clark's Bittersweet Brownie Shortbread, (originally featured in the New York Times Cooking).
