Ingredients
- 3 cups all-purpose flour or bread flour, plus more for shaping the dough
- 2 teaspoon instant “quick rise” yeast
- 2 teaspoons salt
- 1 1/2 cups room temperature water
Method
1. Mix the dough:
In a large bowl, whisk the flour, yeast, and salt until combined. Make a well in the flour and pour the water into it. Mix together with your hands or a spoon until all the flour is incorporated. The dough will be soft and sticky.
2. Let the dough rise:
Cover the bowl with plastic wrap and leave at room temperature for 2 to 4 hours until it has doubled in size.
Once it has doubled in size, with a wet hand or spatula reach under one side of the dough and stretch and fold it over the top of the dough toward the center. Rotate it 1/4 turn and repeat. Repeat this 2 to 4 times. This deflates the dough and gives it better structure. Cover the bowl with plastic wrap and let rise for 30 minutes to 1 hour.
3. Pre-heat baking sheet or Dutch Oven.
Pre-heat oven to 450 degrees Fahrenheit and pre-heat a baking sheet or Dutch oven while dough is rising.
4. Shape the dough
On a generously floured work surface turn out the dough. Using floured hands, shape the dough into a ball and place on a parchment lined baking sheet. Using a sharp knife, gently score the top of the loaf about 2 cm deep.
5. Bake the loaf.
If using a preheated baking sheet, gently slide the loaf and parchment paper onto the preheated baking sheet in the over.
If using a Dutch oven, gentle lower the loaf on parchment paper into Dutch oven and cover.
Bake for 45 minutes. **If using Dutch oven, remove lid after 20 minutes and continue baking.
6. Transfer Bread to a rack to cool.
Carefully remove bread from baking sheet or Dutch oven and let cool for 1 hour.
